Mee Goreng

Ingredients:

3 tablespoons of chili paste or to taste

6 cloves garlic (chopped)
1 potato (cubed & steam boiled)
10 fresh prawns (peeled & deveined)
2 big squids (cleaned and cut into rings)
1 packet Yellow Noodles



Sauces **


2 tablespoon of soy sauce
3 tablespoon of tomato ketchup
Sugar and salt to taste



2 eggs
2 tomatoes (cubed)
1 onion (cubed)
A handful of Bean sprouts (optional)
1 red chili (optional - for garnishing)
1 green chili (optional - for garnishing)
1 piece of dried bean curds (cubed & slightly stir fry till golden brown)
2 lime (cut into wedges)


Directions:

1. Blend 15 dried red chilies in a food processor. Add some water and some oil to blend well. Heat the wok and stir fry the paste until fragant.

2. Heat wok with 3 tablespoon of cooking oil, add in chili paste stir fly, add garlic, potato, prawns and squids. Stir fry for 2 mins.

3. Add yellow noodles stir fly for 1 min.

4. Add sauces and continue stirring until mixture becomes slightly dry. Set the noodles to the side of the wok.

5. Add some cooking oil and then crack the eggs. Scramble the eggs and mix in with the noodles. Add in the onion, tomato, bean sprouts, green & red chilies and quick stir for another 3 minute. (add some hot water if is too dry)

6. Add dried bean curds stir fly for 1 minute.

7. Squeeze some lime juice over the noodles before eating.
