Potato Soup



Description:I made this for my husband and he loves it. It is quick and easy, servings for 4.

Ingredients:

1 medium carrot (diced)

6 small onions (diced)

3 large cloves garlic (diced)

1L Heiz chicken broth

6 large potatoes (cubed)

4 slices of picnic ham (diced)

4 slices bacon (pan fried & diced)

3 tablespoons butter






Directions:



1. Melt the butter in a large, heavy-bottomed pot over medium-high heat.

2. Add diced carrot, onion & garlic, cook until soft

3. Add in Chicken broth into pot bring to boil.

4. Add cubed potatoes.

5. While waiting for potatoes to turn soft, pan fried bacon until crispy and diced it.

6. Add diced bacon to broth.

7. Reduce heat and simmer uncovered until potatoes are tender, about 20 minutes.

8. Add 2/3 packet milk heat through.

9. Ready to serve

10. Soup will thicken when it gets cold, add milk to thin out.
